Description
A refreshing and delicious Greek Tortellini Pasta Salad that combines cheese tortellini with fresh vegetables and flavorful Greek dressing.
Ingredients

- 1 20 ounce package of cheese tortellini
- 1 cup Greek salad dressing
- 1 English cucumber, chopped
- 1/4 cup red onion, diced
- 1/2 cup kalamata olives, diced
- 1/2 cup pepperoncini peppers, chopped
- 1/2 cup bell pepper, diced
- 1 cup tomatoes
- 1 cup Feta cheese, crumbled
- 2–3 tablespoons fresh parsley, chopped
- Optional homemade Greek dressing:
- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- 1 garlic clove, minced
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
Instructions
- Cook the tortellini according to the package directions. Drain the tortellini and rinse under cold water.
- Place the tortellini in a large bowl. Add olives, tomatoes, onion, cucumber, pepperoncini, bell pepper, parsley, and Feta cheese. Stir in the dressing and toss to fully combine.
- Cover the bowl and refrigerate until ready to serve.
- For homemade Greek dressing, place all of the dressing ingredients in a bowl and whisk until combined.

- Feel free to customize the vegetables based on your preference.
- Can be made a day ahead for better flavor.
