- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt or to taste

- 2 large ripe tomatoes, sliced 1/2-inch thick
- 8 ounces fresh mozzarella, sliced 1/4-inch thick
- ½ cup fresh basil leaves, sliced into ribbons
- 2 tablespoons balsamic glaze
- Olive oil (optional for drizzle)
- Flaky sea salt (optional for serving)
- Freshly ground black pepper (optional for serving)
Instructions
- Preheat outdoor grill to medium heat or set stove to high heat and preheat indoor grill pan.
- Pat the chicken dry, drizzle with olive oil, and sprinkle with Italian seasoning, garlic powder, salt, and pepper on both sides.
- Grill the chicken for about 3 minutes per side until nearly done.
- In the final minute of cooking, place cheese slices over each piece of chicken to melt.
- If desired, grill tomatoes drizzled with olive oil for about 60-90 seconds per side.
- Top melted cheese on chicken with grilled tomatoes and sprinkle with basil ribbons.
- Drizzle with balsamic glaze and serve warm, optionally garnished with olive oil, flakey sea salt, or pepper.
