A delicious Grilled Chicken Caprese recipe featuring tender chicken breasts topped with fresh tomatoes, mozzarella, and basil, all drizzled with balsamic glaze.


Ingredients

  • 1.50 pounds boneless skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt or to taste
  • ½ teaspoon freshly ground black pepper or to taste
  • 2 large ripe tomatoes, sliced 1/2-inch thick
  • 8 ounces fresh mozzarella, sliced 1/4-inch thick
  • ½ cup fresh basil leaves, sliced into ribbons
  • 2 tablespoons balsamic glaze
  • Olive oil (optional for drizzle)
  • Flaky sea salt (optional for serving)
  • Freshly ground black pepper (optional for serving)

Instructions

  1. Preheat outdoor grill to medium heat or set stove to high heat and preheat indoor grill pan.
  2. Pat the chicken dry, drizzle with olive oil, and sprinkle with Italian seasoning, garlic powder, salt, and pepper on both sides.
  3. Grill the chicken for about 3 minutes per side until nearly done.
  4. In the final minute of cooking, place cheese slices over each piece of chicken to melt.
  5. If desired, grill tomatoes drizzled with olive oil for about 60-90 seconds per side.
  6. Top melted cheese on chicken with grilled tomatoes and sprinkle with basil ribbons.
  7. Drizzle with balsamic glaze and serve warm, optionally garnished with olive oil, flakey sea salt, or pepper.
