Description

A delicious and tropical grilled dish featuring marinated chicken with vibrant mango and pineapple flavors.


Ingredients

Scale
  • 1 ½ pounds thin-sliced boneless skinless chicken breasts
  • 8 ounces Island Salsa
  • ⅓ cup lime juice
  • ¼ cup olive oil
  • ½ teaspoon freshly ground black pepper
  • 1 large yellow bell pepper, sliced into 1/2-inch wide strips
  • 2 tablespoons olive oil (for peppers)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper (for peppers)
  • 4 ounces Island Salsa (for garnish)
  • ½ cup diced mango
  • ⅓ cup pineapple tidbits
  • 2 to 4 tablespoons fresh cilantro (optional)

Instructions

  1. To a large ziptop plastic bag, add the chicken, salsa, lime juice, olive oil, and black pepper. Seal the bag and mix to evenly coat the chicken. Marinate in the fridge for at least 30 minutes, or overnight.
  2. Lightly oil the grill grates and preheat the grill to medium-high heat.
  3. Add the bell peppers to a grill basket, drizzle with olive oil, season with salt and pepper, and toss to coat.
  4. Place the chicken on one side of the grill and the grill basket with peppers on the other side. Discard the marinade.
  5. Grill the chicken for about 4 to 5 minutes on one side with the lid closed, then flip and grill for another 4 to 5 minutes until cooked through.
  6. Stir the peppers occasionally while they cook, noting they may finish a minute or two faster than the chicken.
  7. Transfer the chicken to a serving platter, top with additional salsa, mango, and pineapple, and optionally sprinkle with cilantro. Serve immediately.

Notes

  • For best flavor, marinate the chicken overnight.
  • This dish can be served with rice or a fresh salad.
