A flavorful dish featuring grilled tofu marinated in za’atar, served with a fresh salad and hummus.

- 1 package 14-oz. package of extra-firm tofu, drained and pressed
- 3 tsp za’atar, divided
- 4 Tbsp extra-virgin olive oil, divided
- 1 ¼ tsp kosher salt, divided
- 1 cup cherry tomatoes, halved
- 2 small Persian cucumbers, thinly sliced
- ½ cup pitted mixed olives, halved
- ½ cup thinly sliced red onion
- 1 Tbsp fresh lemon juice
- 2 Tbsp capers, drained
- ¼ tsp kosher salt for seasoning the salad
- ¾ cup hummus
- Chopped fresh flat-leaf parsley for garnish (optional)
- Pita bread for serving
Instructions
- Cut the pressed tofu into bite-sized cubes.
- In a bowl, whisk together 2 tablespoons of olive oil, 2 teaspoons of za’atar, and 1 teaspoon of salt.
- Toss the tofu cubes gently in the marinade and let them sit for at least 30 minutes.
- In a large mixing bowl, combine the halved cherry tomatoes, cucumber slices, olives, and red onions.
- Drizzle in 2 tablespoons of olive oil, the lemon juice, remaining za’atar (1 teaspoon), and the capers. Toss gently.
- Preheat the grill to medium-high heat.
- Thread the marinated tofu onto skewers.
- Place skewers on the grill and cook for about 10-15 minutes, turning occasionally until golden and slightly charred.
- Serve the skewers alongside the refreshing salad and a generous scoop of creamy hummus.
- Garnish with chopped parsley and serve with pita bread.
