Grilled Za’atar Tofu Skewers

Description

A flavorful dish featuring grilled tofu marinated in za’atar, served with a fresh salad and hummus.


Ingredients

  • 1 package 14-oz. package of extra-firm tofu, drained and pressed
  • 3 tsp za’atar, divided
  • 4 Tbsp extra-virgin olive oil, divided
  • 1 ¼ tsp kosher salt, divided
  • 1 cup cherry tomatoes, halved
  • 2 small Persian cucumbers, thinly sliced
  • ½ cup pitted mixed olives, halved
  • ½ cup thinly sliced red onion
  • 1 Tbsp fresh lemon juice
  • 2 Tbsp capers, drained
  • ¼ tsp kosher salt for seasoning the salad
  • ¾ cup hummus
  • Chopped fresh flat-leaf parsley for garnish (optional)
  • Pita bread for serving

Instructions

  1. Cut the pressed tofu into bite-sized cubes.
  2. In a bowl, whisk together 2 tablespoons of olive oil, 2 teaspoons of za’atar, and 1 teaspoon of salt.
  3. Toss the tofu cubes gently in the marinade and let them sit for at least 30 minutes.
  4. In a large mixing bowl, combine the halved cherry tomatoes, cucumber slices, olives, and red onions.
  5. Drizzle in 2 tablespoons of olive oil, the lemon juice, remaining za’atar (1 teaspoon), and the capers. Toss gently.
  6. Preheat the grill to medium-high heat.
  7. Thread the marinated tofu onto skewers.
  8. Place skewers on the grill and cook for about 10-15 minutes, turning occasionally until golden and slightly charred.
  9. Serve the skewers alongside the refreshing salad and a generous scoop of creamy hummus.
  10. Garnish with chopped parsley and serve with pita bread.
