- 2 cups granulated sugar
- 2 large eggs
- 1 can (20 oz) crushed pineapple with juice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup vegetable oil
- 1 cup chopped pecans
- 8 oz cream cheese
- 1/2 cup butter
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Mix flour, sugar, baking soda, and salt in a large bowl.
- Add eggs, crushed pineapple with juice, vanilla extract, and oil. Mix until combined.
- Fold in chopped pecans.
- Pour batter into pan and spread evenly.
- Bake for 30–35 minutes until a toothpick comes out clean.
- Cool completely in the pan.
- Beat cream cheese and butter until smooth, then add powdered sugar.
- Spread frosting over cooled cake.
- Slice and serve.
