Ingredients

  • 2 cups granulated sugar
  • 2 large eggs
  • 1 can (20 oz) crushed pineapple with juice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 1 cup chopped pecans
  • 8 oz cream cheese
  • 1/2 cup butter
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Mix flour, sugar, baking soda, and salt in a large bowl.
  3. Add eggs, crushed pineapple with juice, vanilla extract, and oil. Mix until combined.
  4. Fold in chopped pecans.
  5. Pour batter into pan and spread evenly.
  6. Bake for 30–35 minutes until a toothpick comes out clean.
  7. Cool completely in the pan.
  8. Beat cream cheese and butter until smooth, then add powdered sugar.
  9. Spread frosting over cooled cake.
  10. Slice and serve.
