- ½ cup pineapple juice from a 15-ounce can of canned pineapple chunks
- ¼ cup chicken broth, reduced sodium
- 3 tablespoons reduced sodium soy sauce
- 3 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 1 teaspoon ground ginger (or freshly grated)
- 1 to 2 garlic cloves, finely minced (or 1/2 to 1 teaspoon garlic powder)
- ½ teaspoon red pepper flakes (or to taste)
- 2 tablespoons olive oil
- 1 to 1 ¼ pounds boneless skinless chicken breasts, diced
- 1 teaspoon salt (more to taste)
- 1 teaspoon freshly ground black pepper (or to taste)
- 3 cups bell peppers, seeded and diced (1 cup each of red, orange, and yellow peppers)
- 2 cloves garlic, finely minced
- Pineapple chunks, reserved from the can
- Green onions, optional for garnish
- Sesame seeds, optional for garnish
Instructions
- In a medium bowl, combine all sauce ingredients and whisk to combine, then set aside.
- In a large skillet, heat olive oil, add the chicken, and season with salt and pepper. Sauté over medium-high heat for about 5 minutes until cooked through. Remove chicken with a slotted spoon and set aside.
- Add bell peppers to the same skillet and sauté over medium-high heat for about 5 minutes until crisp-tender. Add more olive oil if necessary.
- Whisk the sauce again to redistribute the honey, then add it to the skillet with the peppers. Allow to simmer for about 2 minutes, stirring frequently to thicken.
- Add the chicken back in along with the reserved pineapple chunks, stirring to combine. Cook for 1-2 minutes until everything is warm.
- Taste and add additional seasoning if needed before serving.
- Serve immediately with rice, cauliflower rice, quinoa, or a grain of choice to soak up the sauce.
