Ingredients

  • 1 pound Ground Beef or ground turkey
  • 1 tablespoon Olive Oil or canola/vegetable oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Potatoes, thinly sliced
  • 1 cup Cheddar Cheese, shredded
  • 1/2 cup Parmesan Cheese, grated
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper
  • 1 cup Beef Broth or Water
  • 1/4 cup Milk (optional)
  • 2 tablespoons Fresh Parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with olive oil or cooking spray.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the ground beef and cook for 5-7 minutes, breaking it apart until browned. Drain excess fat.
  3. Add chopped onions and minced garlic to the skillet with the beef. Cook for 3-4 minutes until onions are translucent.
  4. Transfer the beef mixture into the greased baking dish. Layer thinly sliced potatoes over the beef, overlapping slightly. Season with salt, pepper, Italian seasoning, and paprika.
  5. Sprinkle shredded cheddar and grated Parmesan cheese over the potatoes. Pour beef broth or water around the edges and drizzle milk if using.
  6. Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
  7. Remove the foil and continue baking for an additional 15-20 minutes until cheese is bubbly and potatoes are tender.
  8. Let the casserole cool for a few minutes, garnish with chopped fresh parsley, and serve hot.
