Description

A delicious and fresh salad featuring honey lemon-glazed salmon, perfect for a light meal.


Ingredients

  • Honey-Lemon Dressing
  • ½ cup honey
  • ½ cup lemon juice
  • 3 to 4 tablespoons olive oil + 2 tablespoons for cooking
  • 2 to 3 tablespoons dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Salmon Salad
  • 2 salmon filets, about 6 ounces each
  • 4 cups romaine lettuce
  • 1 large tomato, diced
  • ½ cup cucumber, peeled and diced
  • ⅓ cup shredded cheese, Monterey Jack, cheddar, or your favorite cheese blend

Instructions

  1. In a large measuring cup or small bowl, combine honey, lemon juice, 3 to 4 tablespoons olive oil, dijon mustard, salt, and pepper, whisking to combine.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
  3. Add the salmon to the skillet and cook for about 4 to 5 minutes, or until the first side is lightly seared.
  4. Flip the salmon and cook for an additional minute.
  5. Pour half of the honey-lemon mixture over the salmon (reserve the other half for the salad). Beware of bubbling. Cook for an additional 2 to 3 minutes, or until the sauce thickens and the salmon is cooked through. Spoon the sauce over the salmon as it cooks.
  6. Remove the pan from heat and let the salmon rest in the pan while preparing the salad.
  7. On a large platter, arrange the lettuce and sprinkle with diced tomatoes, cucumber, and shredded cheese.
  8. Top the salad with the salmon and any remaining sauce from the skillet, drizzling with the reserved vinaigrette as desired. Serve immediately for best freshness.

  • Salad is best served fresh once dressed.
  • Feel free to adjust the amount of honey in the dressing to taste.
  • You can use any type of cheese you prefer for the salad.
