Description

A delicious and easy Italian chicken dinner featuring tender chicken breasts, sautéed mushrooms, and zucchini, all cooked in one skillet.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 medium zucchinis, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, oregano, and basil.
  2. Place the chicken in the skillet and cook for 5-7 minutes on each side until they are golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  3. Using the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
  4. Introduce the sliced mushrooms and zucchini to the skillet and cook for 5-7 minutes until the vegetables are tender.
  5. Return the chicken to the skillet, adding the chicken broth. Simmer for 5 minutes, allowing the flavors to blend.
  6. Sprinkle with grated Parmesan cheese, letting it melt slightly.
  7. Garnish with chopped fresh parsley before serving.

Notes

  • Serve with crusty bread or over a bed of rice for a complete meal.
  • You can substitute chicken thighs if you prefer dark meat.
  • Add red pepper flakes for a spicy kick.
