A delicious and easy Italian chicken dinner featuring tender chicken breasts, sautéed mushrooms, and zucchini, all cooked in one skillet.

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 medium zucchinis, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, oregano, and basil.
- Place the chicken in the skillet and cook for 5-7 minutes on each side until they are golden brown and fully cooked. Remove the chicken from the skillet and set aside.
- Using the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
- Introduce the sliced mushrooms and zucchini to the skillet and cook for 5-7 minutes until the vegetables are tender.
- Return the chicken to the skillet, adding the chicken broth. Simmer for 5 minutes, allowing the flavors to blend.
- Sprinkle with grated Parmesan cheese, letting it melt slightly.
- Garnish with chopped fresh parsley before serving.
Notes
- Serve with crusty bread or over a bed of rice for a complete meal.
- You can substitute chicken thighs if you prefer dark meat.
- Add red pepper flakes for a spicy kick.
