Ingredients

  • 6 ounces (170g) unsalted butter, fridge-cold
  • 1 ¾ cups (250g) all-purpose flour
  • ½ cup (100g) icing sugar
  • Zest of 2 limes + 12 tbsp lime juice
  • 1 egg yolk
  • ⅓ cup (80g) unsalted butter, room temperature
  • ⅓ cup (80g) icing sugar
  • ½ cup (100g) lime curd

Instructions

  1. In a large bowl, add flour. Cut in cold butter using your fingertips until it resembles breadcrumbs.
  2. Mix in icing sugar and lime zest.
  3. Add egg yolk and lime juice. Gently bring dough together into a ball; do not overwork.
  4. Divide dough in half, flatten each half, wrap in plastic wrap, and chill for 30 minutes.
  5. Preheat oven to 320°F (160°C Fan). Line two baking sheets with parchment paper.
  6. On a lightly floured surface, roll out dough to ⅛ inch (3 mm) thickness. Use a 2-inch (5cm) cutter to cut out about 80 discs. Use a smaller cutter to cut out the centers of half the discs.
  7. Bake for 12-13 minutes, rotating halfway through. Let cool completely.
  8. In a bowl, beat softened butter and icing sugar until fluffy to make buttercream.
  9. Pipe buttercream around the edge of each bottom cookie. Top with the cookies that have holes, pressing lightly. Fill the center with lime curd.
  10. Dust with icing sugar before serving (optional).
