Description

Lazy Baker’s No-Bulk-Fermentation Sourdough Bread is an easy method to create delicious and airy sourdough bread without the need for traditional bulk fermentation.


Ingredients

Scale
  • 500g King Arthur Bread Flour
  • 100g active sourdough starter (fed and bubbly)
  • 350g water, room temperature
  • 15g salt

Instructions

  1. Mix the flour, water, and sourdough starter in a large bowl and let it rest for one hour.
  2. Add salt and perform stretch and folds over two hours.
  3. Transfer the dough to a lightly oiled container, cover, and refrigerate for 36 to 48 hours.
  4. Remove from the fridge, shape the dough, and let it rest for 30 minutes.
  5. Reshape and proof the dough, optionally resting in the fridge for another 10 to 24 hours.
  6. Preheat the oven to 450°F (232°C) with a Dutch oven inside for 45 minutes.
  7. Transfer the dough to the Dutch oven and bake covered for 25 minutes, then uncovered for 35 minutes at 400°F (204°C).

Notes

  • Using King Arthur Bread Flour will yield a better texture due to its higher protein content.
  • A longer cold fermentation enhances the flavor of the bread.
  • The use of a Dutch oven helps create steam, essential for a good rise.
