Delicious and healthy Lean Ground Turkey Zucchini Boats filled with savory turkey, marinara, and topped with crispy Parmesan cheese.

- 4 zucchini (halved lengthwise and scooped out)
- 1/4 cup Parmesan cheese (Kraft Grated Parmesan preferred)
- 3/4 onion, finely diced
- 1 lb ground turkey
- 1 3/4 cups marinara (Rao’s Homemade recommended)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
Instructions
- Preheat your oven to 400°F. Wash the zucchini and cut each one in half lengthwise. Scoop out the centers, leaving about 1/4 inch of flesh.
- Arrange the hollowed zucchini halves cut-side up in a 9×13 inch baking dish, spacing them evenly.
- Heat a large skillet over medium-high heat. Add the ground turkey and diced onion, cooking for 8-10 minutes until turkey is cooked through and the onion is softened.
- Sprinkle garlic powder and dried oregano over the turkey mixture and stir to combine.
- Pour in the marinara sauce and stir well, allowing to simmer for 2-3 minutes.
- Spoon the turkey-marinara mixture into each zucchini boat, distributing evenly.
- Sprinkle Parmesan cheese over the top of each boat.
- Cover the baking dish with foil and bake for 20-30 minutes. Remove the foil for the last 2-3 minutes to brown the cheese slightly.
Notes
- Let the turkey sit undisturbed for the first minute or two to develop flavor.
- Adjust seasonings to taste before filling the zucchini boats.
- The zucchini should collapse slightly when cooked through.
