Description

Delicious and healthy Lean Ground Turkey Zucchini Boats filled with savory turkey, marinara, and topped with crispy Parmesan cheese.


Ingredients

Scale
  • 4 zucchini (halved lengthwise and scooped out)
  • 1/4 cup Parmesan cheese (Kraft Grated Parmesan preferred)
  • 3/4 onion, finely diced
  • 1 lb ground turkey
  • 1 3/4 cups marinara (Rao’s Homemade recommended)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat your oven to 400°F. Wash the zucchini and cut each one in half lengthwise. Scoop out the centers, leaving about 1/4 inch of flesh.
  2. Arrange the hollowed zucchini halves cut-side up in a 9×13 inch baking dish, spacing them evenly.
  3. Heat a large skillet over medium-high heat. Add the ground turkey and diced onion, cooking for 8-10 minutes until turkey is cooked through and the onion is softened.
  4. Sprinkle garlic powder and dried oregano over the turkey mixture and stir to combine.
  5. Pour in the marinara sauce and stir well, allowing to simmer for 2-3 minutes.
  6. Spoon the turkey-marinara mixture into each zucchini boat, distributing evenly.
  7. Sprinkle Parmesan cheese over the top of each boat.
  8. Cover the baking dish with foil and bake for 20-30 minutes. Remove the foil for the last 2-3 minutes to brown the cheese slightly.

Notes

  • Let the turkey sit undisturbed for the first minute or two to develop flavor.
  • Adjust seasonings to taste before filling the zucchini boats.
  • The zucchini should collapse slightly when cooked through.
