Ingredients

  • 4 fillets cod (about 6 ounces each)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 large lemon, juice and zest
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • to taste lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper to prevent sticking.
  2. In a small saucepan, melt the butter over low heat.
  3. Add the minced garlic to the melted butter and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Stir in the lemon juice, lemon zest, parsley, salt, pepper, and paprika. Mix well to combine.
  5. Place the cod fillets in the prepared baking dish, and pour the garlic butter mixture evenly over the fish.
  6. Bake in the preheated oven for 15-20 minutes or until the cod flakes easily with a fork and is cooked through.
  7. Remove from the oven and let it rest for 2-3 minutes before serving.
  8. Serve the cod with lemon wedges on the side for an extra burst of citrus flavor.
