- 14 oz firm tofu, drained and pressed
- 3 tablespoons olive oil
- 1 large lemon, zest and juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- to taste salt and pepper
- for garnish fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the pressed tofu into cubes (about 1 inch each) and set aside in a mixing bowl.
- In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper to create a marinade.
- Pour the marinade over the tofu cubes and gently toss until all pieces are evenly coated.
- Spread the marinated tofu cubes in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the tofu is golden and slightly crispy on the edges.
- Remove from the oven and let it cool slightly. Garnish with fresh chopped parsley before serving.
Notes
- Press the tofu well to remove excess moisture for better flavor absorption.
- Feel free to add other herbs or spices to customize the flavor to your liking.
- Tofu can be served over rice or with a side of vegetables for a complete meal.
