Description

A flavorful and healthy vegan dish featuring baked tofu marinated in a zesty lemon herb mixture.


Ingredients

  • 14 oz firm tofu, drained and pressed
  • 3 tablespoons olive oil
  • 1 large lemon, zest and juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the pressed tofu into cubes (about 1 inch each) and set aside in a mixing bowl.
  3. In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper to create a marinade.
  4. Pour the marinade over the tofu cubes and gently toss until all pieces are evenly coated.
  5. Spread the marinated tofu cubes in a single layer on the prepared baking sheet.
  6. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the tofu is golden and slightly crispy on the edges.
  7. Remove from the oven and let it cool slightly. Garnish with fresh chopped parsley before serving.

Notes

  • Press the tofu well to remove excess moisture for better flavor absorption.
  • Feel free to add other herbs or spices to customize the flavor to your liking.
  • Tofu can be served over rice or with a side of vegetables for a complete meal.
