Instructions

- Create the Raspberry Sauce: In a saucepan over medium heat, combine the fresh raspberries, sugar, and lemon juice. Cook until the raspberries break down and the sauce thickens, about 10 minutes.
- Strain the Sauce: For a smoother consistency, strain the sauce through a fine mesh sieve to remove the seeds.
- Prepare the Dome: In a bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix until the crumbs are evenly coated.
- Shape the Dome: Press the crumb mixture into the bottom and sides of a dome-shaped mold or bowl. Ensure it’s compact and even.
- Assemble the Dessert: Pour half of the cheesecake filling into the prepared crust, followed by a layer of raspberry sauce. Top with the remaining cheesecake filling.
- Chill the Dome: Cover the mold with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
