- 2 lbs russet potatoes
- 4 tbsp butter
- 1 cup sour cream
- 1/2 cup milk
- 2 cups shredded cheddar cheese
- 8 slices bacon
- 1/4 cup green onions
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Peel and cut potatoes into chunks, then boil in salted water for 15–20 minutes until fork-tender.
- Drain the potatoes well and transfer them to a large mixing bowl.
- Add butter, milk, and sour cream, then mash until smooth and creamy.
- Stir in salt, pepper, and garlic powder, adjusting seasoning to taste.
- Mix in half of the cheddar cheese, most of the cooked bacon, and some green onions.
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Spread the potato mixture evenly into the dish.
- Top with remaining cheese and bacon.
- Bake for 20–25 minutes until hot and bubbly.
- Garnish with green onions and serve warm.
Notes
- Make sure to cook the potatoes until they are fork-tender for the best texture.
- You can substitute the bacon with a plant-based option for a vegetarian version.
