Description

A creamy and delicious Loaded Baked Potato Casserole filled with cheese, bacon, and green onions, perfect for any gathering.


Ingredients

  • 2 lbs russet potatoes
  • 4 tbsp butter
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 8 slices bacon
  • 1/4 cup green onions
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Peel and cut potatoes into chunks, then boil in salted water for 15–20 minutes until fork-tender.
  2. Drain the potatoes well and transfer them to a large mixing bowl.
  3. Add butter, milk, and sour cream, then mash until smooth and creamy.
  4. Stir in salt, pepper, and garlic powder, adjusting seasoning to taste.
  5. Mix in half of the cheddar cheese, most of the cooked bacon, and some green onions.
  6. Preheat oven to 375°F (190°C) and grease a baking dish.
  7. Spread the potato mixture evenly into the dish.
  8. Top with remaining cheese and bacon.
  9. Bake for 20–25 minutes until hot and bubbly.
  10. Garnish with green onions and serve warm.
