Description

A delicious twist on a classic side dish featuring steamed cauliflower, cheese, and crispy bacon.


Ingredients

  • 1 head cauliflower steamed or 6 cups Steamed Cauliflower Rice
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup sour cream
  • 2 teaspoons dry ranch seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 4 tablespoons real bacon bits divided
  • 1/4 cup whole whipping cream OPTIONAL

Instructions

  1. Preheat oven to 350°F.
  2. Steam the cauliflower head by breaking it apart and discarding the green leaves. Steam until a fork can easily pierce the vegetable.
  3. Mash the steamed cauliflower in a large mixing bowl and season with salt and pepper.
  4. If using cauliflower rice, ensure you have approximately 6 cups of steamed cauliflower rice.
  5. Set aside 1 tablespoon of shredded cheddar cheese, then add the remaining cheddar cheese, sour cream, ranch seasoning, onion powder, garlic powder, and 3 tablespoons of bacon bits to the cauliflower and mix well. If using, add the whole whipping cream at this stage.
  6. Transfer the cauliflower mixture into a small baking dish and heat in the oven for 35 minutes until hot.
  7. Remove from oven and immediately sprinkle with the remaining cheddar cheese and 1 tablespoon of bacon bits.
  8. Serve while hot and melty.

  • This dish can be made ahead and reheated before serving.
  • For a healthier option, you can reduce the amount of cheese used.
