Description

A delightful and easy-to-make Maple Pumpkin Spice Chex Mix prepared in a Crock-Pot, perfect for snacking.


Ingredients

  • 6 cups Chex cereal (3 cups Rice Chex and 3 cups honey-nut Chex)
  • 2 cups dried fruit (1 cup dried cranberries and 1 cup dried cherries)
  • 1 ½ to 2 cups nuts (¾ cup honey-roasted cashews and ¾ cup honey-roasted peanuts)
  • 1 ½ to 2 cups pretzels
  • 1 ½ chopped graham crackers (about 5 full-size graham crackers)
  • ½ cup unsalted butter, melted
  • ½ cup maple syrup (sugar-free pancake syrup recommended)
  • ¼ cup light brown sugar, packed
  • 1 to 2+ tablespoons pumpkin pie spice
  • 1 tablespoon vanilla extract
  • salt, optional and to taste

Instructions

  1. Add cereal, dried fruit, nuts, pretzels, and graham crackers to a 6-quart Crock-Pot.
  2. In a microwave-safe measuring cup, melt the butter for about 1 minute on high power.
  3. Mix in maple syrup, brown sugar, pumpkin pie spice, vanilla, and optional salt; whisk to combine.
  4. Drizzle the wet mixture evenly over the dry ingredients and stir well to combine.
  5. Cook covered on high for about 2 hours, stirring every 15-20 minutes.
  6. Keep an eye on the mix to avoid burning, particularly starting at 1 ½ hours.
  7. Turn the mixture out onto a baking tray and allow to dry for at least 2 hours, preferably overnight.

Notes

  • The mix will dry more as it cools, though it will remain sticky and tacky.
