- 14 to 16 ounces firm tofu or extra-firm
- ½ cup Greek yogurt or non-dairy yogurt
- 1 tablespoon olive oil
- 1½ tablespoons soy sauce or tamari
- 2 cloves garlic, grated
- 1 teaspoon onion powder (optional)
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano or dried dill
- 1 teaspoon salt plus black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together Greek yogurt, olive oil, soy sauce, grated garlic, onion powder, smoked paprika, dried oregano, salt, and black pepper until smooth.
- Drain the tofu and pat it dry with paper towels. Tear it into bite-size pieces, add to the bowl, and gently toss until evenly coated.
- Arrange the tofu in a single layer on the baking sheet. Bake for 30 minutes, or until golden around the edges.
- Serve warm in grain bowls, salads, wraps, or with your favorite vegetables.

- You can substitute the Greek yogurt with a non-dairy yogurt for a vegan option.
