- 200g granulated sugar
- 100g light brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- 120g all-purpose flour
- 30g unsweetened cocoa powder

- 200g Mint Aero chocolate
- 75g chocolate chips (optional)
- 50g chopped walnuts (optional)
Instructions
- Preheat oven to 170°C (340°F) and line an 8×8-inch baking tin with parchment paper.
- Melt dark chocolate and butter together until smooth, then let cool slightly.
- Whisk granulated sugar, brown sugar, and eggs until pale and thick.
- Slowly mix melted chocolate into the egg mixture and add vanilla extract.
- Fold in flour, cocoa powder, and salt until just combined.
- Pour half the batter into the prepared pan and spread evenly.
- Layer Mint Aero chocolate pieces evenly over the batter.
- Cover with remaining batter, spreading gently.
- Bake for 25–30 minutes until edges are set and center is slightly soft.
- Cool completely before slicing into squares.
Notes
- For extra texture, add chocolate chips and walnuts.
- Ensure the chocolate mixture cools slightly before adding to eggs to prevent scrambling.
