Description
Delicious and spicy chicken sliders made with tender shredded chicken thighs, creamy sriracha mayo, all stuffed in toasted pretzel buns for a delightful treat.

- 3 lb chicken thighs (cut into 1-inch chunks)
- 1 tbsp olive oil
- 1/2 cup ketchup
- 1/3 cup sriracha
- 1/2 cup honey
- 1/2 cup water
- 5 tbsp lime juice
- 4 tsp lime zest
- 1 tbsp minced garlic
- 2 tsp grated ginger
- 1/2 tsp black pepper
- 12 pretzel buns
- 6 slices mozzarella cheese (cut in halves)
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp toasted sesame oil
- 3/4 tsp red pepper flakes
- 1/2 tsp coarse sea salt
- 1 cup mayo
- 1 1/2 tbsp sriracha
- 3 scallions, thinly sliced
Instructions
- In a medium bowl, whisk together the ketchup, sriracha, honey, water, lime juice, lime zest, minced garlic, grated ginger, and black pepper until smooth and well combined. Set aside.
- Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken thigh chunks and cook for 5 minutes until golden brown. Pour the bang bang sauce over the chicken, bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes.
- Remove the chicken and shred it into bite-sized pieces. Return it to the pot, stir gently to coat with the thickened sauce.
- Preheat your oven to 375°F. In a small bowl, whisk together olive oil, honey, sesame oil, red pepper flakes, and sea salt. Arrange pretzel bun bottoms in a 9×13-inch baking dish.
- Layer half of the mozzarella, then the shredded chicken, followed by the remaining cheese. Cap with the pretzel bun tops.
- Brush the glaze over the pretzel buns and bake for 10-15 minutes until toasted and cheese is melted.
- While sliders bake, prepare sriracha mayo by mixing mayo and sriracha.
- Remove sliders from the oven, sprinkle with scallions, serve warm with sriracha mayo on the side.
Notes
- Using freshly squeezed lime juice enhances the flavor.
- Keep an eye on the sliders while baking to avoid over-browning.
- Replacing the mozzarella with a different cheese can add a unique flavor.
