Ingredients
Scale
- 2 cups shredded coconut
- 1 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil

- Scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
- Place the coconut balls on a parchment-lined baking sheet and refrigerate for 30 minutes to firm up.
- While the balls are chilling, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals until smooth.
- Dip each chilled coconut ball into the melted chocolate, ensuring they are fully coated, then return them to the baking sheet.
- Refrigerate again for about 15 minutes to set the chocolate.
Notes
- For an extra pop of flavor, sprinkle a little sea salt on top of the chocolate before it sets.
