- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 1 bell pepper, sliced
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine balsamic vinegar, olive oil, minced garlic, oregano, thyme, salt, and pepper. Whisk until the mixture is well blended.
- Add the chicken breasts to the marinade, ensuring they are thoroughly coated. Allow them to marinate for at least 15 minutes.
- Arrange the marinated chicken breasts in the center of a large baking dish or sheet pan. Surround them with cherry tomatoes, zucchini, red onion, and bell pepper.
- Drizzle any leftover marinade over the vegetables and chicken.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C), and the vegetables are tender.
- Remove the dish from the oven and let it rest for a few minutes. Garnish with fresh basil before serving.
