Description

A creamy and flavorful one-pot pasta dish made with orzo, fresh spinach, and Parmesan cheese.


Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add orzo pasta and stir to coat with oil.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and has absorbed most of the liquid.
  7. Stir in chopped spinach and cook for 2-3 minutes until wilted.
  8. Remove from heat, add Parmesan cheese, red pepper flakes (if using), and season with salt and pepper to taste.
  9. Serve warm, garnished with fresh parsley.

Notes

  • For extra flavor, consider adding lemon zest or a splash of lemon juice before serving.
  • This dish can be easily customized with other vegetables or herbs according to your preference.
