Description
A delicious and unique dessert that combines the flavors of peach cobbler and cheesecake, served in a waffle cone.
Ingredients
Scale
- 6 waffle cones
- 8 oz cream cheese, softened
- 1⁄3 cup granulated sugar
- 1 tsp vanilla extract
- 1⁄2 cup sour cream
- 1⁄4 cup heavy cream
- 2 cups diced peaches
- 2 tbsp brown sugar
- 1 tbsp cornstarch
- 1⁄2 tsp ground cinnamon
- pinch nutmeg
- 1 tsp lemon juice
- 1 tbsp unsalted butter, melted
Instructions
- In a bowl, beat the cream cheese and granulated sugar until smooth, then mix in vanilla extract, sour cream, and heavy cream until creamy.
- In a small saucepan, combine diced peaches, brown sugar, cornstarch, ground cinnamon, nutmeg, and lemon juice. Cook over medium heat, stirring, until the mixture thickens and peaches soften, about 5 minutes. Stir in melted butter and remove from heat.
- Spoon or pipe the cheesecake mixture into each waffle cone, filling about two thirds full.
- Top each cone with a generous spoonful of warm peach cobbler filling.
- Place the filled cones upright in a stand or glass, then transfer to the refrigerator.
- Chill for at least 1 hour before serving to allow the cheesecake to set.
Notes
- For best results, use ripe peaches for more flavor.
- This dessert can be made ahead of time, but is best served fresh.
