Description

A delicious and unique dessert that combines the flavors of peach cobbler and cheesecake, served in a waffle cone.


Ingredients

  • 6 waffle cones
  • 8 oz cream cheese, softened
  • 1⁄3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1⁄2 cup sour cream
  • 1⁄4 cup heavy cream
  • 2 cups diced peaches
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1⁄2 tsp ground cinnamon
  • pinch nutmeg
  • 1 tsp lemon juice
  • 1 tbsp unsalted butter, melted

Instructions

  1. In a bowl, beat the cream cheese and granulated sugar until smooth, then mix in vanilla extract, sour cream, and heavy cream until creamy.
  2. In a small saucepan, combine diced peaches, brown sugar, cornstarch, ground cinnamon, nutmeg, and lemon juice. Cook over medium heat, stirring, until the mixture thickens and peaches soften, about 5 minutes. Stir in melted butter and remove from heat.
  3. Spoon or pipe the cheesecake mixture into each waffle cone, filling about two thirds full.
  4. Top each cone with a generous spoonful of warm peach cobbler filling.
  5. Place the filled cones upright in a stand or glass, then transfer to the refrigerator.
  6. Chill for at least 1 hour before serving to allow the cheesecake to set.

Notes

  • For best results, use ripe peaches for more flavor.
  • This dessert can be made ahead of time, but is best served fresh.
