Description

A delicious dessert combining the sweet flavors of fresh peaches with a creamy layer and a buttery crust, perfect for summer.


Ingredients

  • 16 tablespoons butter softened
  • 2 cups granulated sugar
  • ½ teaspoon salt
  • 4 large eggs
  • 1 teaspoon lemon extract
  • ½ teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 8 ounces cream cheese softened
  • ½ cup powdered sugar
  • ¼ teaspoon vanilla extract
  • 4 cups sliced fresh or canned/frozen peaches
  • 1 cup granulated sugar
  • 4 tablespoons peach juice
  • 2 tablespoons corn starch

Instructions

  1. Preheat oven to 350°.
  2. Line a 15x10x1 inch pan with foil, allowing about 4-inches to hang over on the short ends. Spray with a non-stick cooking spray.
  3. Mix together butter, sugar and salt until light and fluffy. Add eggs, one at a time, beating lightly after each addition. Add in extracts and flour and mix until combined.
  4. Spread 3 cups of the dough mixture into prepared pan, spreading to edges and keeping the batter as even as possible.
  5. Prebake for approx. 15 minutes, then remove from oven.
  6. Mix together cream cheese, powdered sugar and vanilla on medium speed until smooth and fluffy. Spread this mixture over the prebaked crust.
  7. Combine corn starch and sugar. Mix in peach juice. Fold peaches into this mixture. Spread peach mixture over the cream cheese mixture.
  8. Drop spoonfuls of the remaining dough mixture across the surface of the peaches.
  9. Bake on center rack of oven for approx. 35-40 minutes, until crust is golden brown.
  10. Cool on wire rack before serving.

Notes

  • You can use fresh, canned, or frozen peaches for this recipe.
  • Make sure to let the bars cool completely before cutting for the best presentation.
