Description

Peanut Butter Greek Yogurt Bites are a delicious and healthy treat combining creamy Greek yogurt and peanut butter, coated in rich chocolate.

Ingredients

Scale
  • 2 cups Greek yogurt, plain or honey vanilla
  • ⅔ cup peanut butter, preferably JIF natural
  • 1 ½ cups chocolate chips
  • 1 ½ teaspoons coconut oil

Instructions

  1. Line a cookie sheet with parchment paper.
  2. In a small mixing bowl, mix Greek yogurt and peanut butter.
  3. Using a medium cookie scoop, spoon the mixture into each ice cube of the silicone mold.
  4. Freeze for 1 to 1 ½ hours.
  5. In a small microwave-safe bowl, melt chocolate chips and coconut oil in the microwave for 30 seconds. Stir and repeat in 30-second intervals until smooth.
  6. Pop the cubes out of molds, dip each cube in the melted chocolate, and place on parchment paper. Alternatively, drizzle the tops with chocolate instead of dipping.
  7. Return to the freezer for 10 minutes.

Notes

  • For a swirl effect, you can blend the Greek yogurt and peanut butter less thoroughly.
  • Feel free to substitute almond butter for peanut butter if desired.
  • Any type of chocolate can be used—dark, milk, or white chocolate.
