Description
Peanut Butter Greek Yogurt Bites are a delicious and healthy treat combining creamy Greek yogurt and peanut butter, coated in rich chocolate.
Ingredients

- 2 cups Greek yogurt, plain or honey vanilla
- ⅔ cup peanut butter, preferably JIF natural
- 1 ½ cups chocolate chips
- 1 ½ teaspoons coconut oil
Instructions
- Line a cookie sheet with parchment paper.
- In a small mixing bowl, mix Greek yogurt and peanut butter.
- Using a medium cookie scoop, spoon the mixture into each ice cube of the silicone mold.
- Freeze for 1 to 1 ½ hours.
- In a small microwave-safe bowl, melt chocolate chips and coconut oil in the microwave for 30 seconds. Stir and repeat in 30-second intervals until smooth.
- Pop the cubes out of molds, dip each cube in the melted chocolate, and place on parchment paper. Alternatively, drizzle the tops with chocolate instead of dipping.
- Return to the freezer for 10 minutes.
Notes
- For a swirl effect, you can blend the Greek yogurt and peanut butter less thoroughly.
- Feel free to substitute almond butter for peanut butter if desired.
- Any type of chocolate can be used—dark, milk, or white chocolate.
