Description

A deliciously moist Pecan Upside Down Cake, with a rich butter and brown sugar base topped with pecans.


Ingredients

  • 1 cup Brown sugar
  • 1 cup Pecans, chopped
  • 1 cup Granulated sugar
  • 1 1/2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 3 Eggs
  • 1 teaspoon Vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a round cake pan.
  2. In a saucepan, melt butter and brown sugar until bubbling; stir in chopped pecans.
  3. Cream softened butter and granulated sugar in a bowl; add eggs one at a time, mixing well after each addition, then incorporate the vanilla.
  4. In another bowl, whisk together flour, baking powder, and salt; gradually add to the wet mixture until just combined.
  5. Pour the pecan mixture into the prepared pan, then spread the batter evenly on top.
  6. Bake for 30-35 minutes or until a toothpick comes out clean; cool slightly before flipping onto a serving plate.
