Description

Learn how to make tangy and flavorful pickled banana peppers that are perfect for adding a zesty kick to sandwiches and dishes.


Ingredients

  • 1 pound fresh banana peppers, about 8 to 10 medium peppers
  • 2 large garlic cloves, peeled and lightly smashed
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon celery seeds
  • 1/2 teaspoon black peppercorns
  • Optional: 1/4 teaspoon crushed red pepper flakes
  • 1 1/2 cups white vinegar, 5% acidity
  • 1/2 cup water
  • 1 1/2 tablespoons kosher salt or pickling salt
  • 2 tablespoons granulated sugar

Instructions

  1. Wash banana peppers well under cool running water, then dry them with a clean towel.
  2. Trim off stem ends, then slice peppers into rings about 1/4 inch thick.
  3. Remove loose seeds for milder pickles or leave some in for extra heat.
  4. Place garlic, mustard seeds, celery seeds, black peppercorns, and red pepper flakes into two clean pint jars.
  5. Pack sliced banana peppers into jars, pressing down gently without crushing them.
  6. Prepare brine by adding white vinegar, water, salt, and sugar to a small saucepan over medium-high heat.
  7. Stir until salt and sugar dissolve, then bring brine to a full boil and let it bubble for 1 minute.
  8. Carefully pour hot brine over packed banana peppers until they are fully covered, leaving about 1/2 inch space at the top of each jar.
  9. Tap jars gently on the counter to release trapped air bubbles, and slide a clean butter knife or skewer along the inside edge if needed.
  10. Let jars sit uncovered at room temperature for about 30 minutes until they are no longer steaming hot.
  11. Once jars are warm, screw lids on tightly and refrigerate.
  12. Let pickled banana peppers chill for at least 24 hours before eating, but 48 hours gives better flavor.
  13. Give jar a gentle shake once or twice during the first day to move spices around.

Notes

  • For a milder flavor, remove more seeds from the peppers.
  • Store pickled peppers in the refrigerator for up to 2 months.
