- 1 lb cocktail sausages, or Lil’ Smokies
- 1 cup fresh pineapple, cut into bite-sized chunks
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- Wooden or metal skewers
Instructions
- Prepare the skewers: If using wooden skewers, soak them in water for about 20–30 minutes to help prevent burning.
- Preheat the oven: Preheat your oven to 375°F / 190°C. Line a baking sheet with parchment paper or foil for easy cleanup.
- Make the glaze: In a small bowl, whisk together brown sugar, soy sauce, Dijon mustard, garlic powder, and ground ginger until smooth.
- Assemble the skewers: Thread the cocktail sausages and pineapple chunks onto the skewers, alternating between smoky sausage and juicy pineapple.
- Brush with glaze: Place the skewers on the prepared baking sheet. Brush them generously with the brown sugar glaze.
- Bake: Bake for 20–25 minutes, turning halfway through and brushing with more glaze, until the smokies are hot and the pineapple is slightly caramelized.
- Broil optional: For extra sticky caramelized edges, broil for 1–2 minutes at the end. Watch closely so the glaze does not burn.
- Serve: Transfer the skewers to a serving platter and serve warm as a sweet and savory appetizer.
