- 2 tablespoons finely chopped red bell pepper (optional)
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt (adjust to taste)
- 1 cup finely chopped pecans (for coating)
Instructions
- In a large mixing bowl, add the softened cream cheese. Beat until smooth and creamy.
- Toss in the crushed pineapple, shredded cheddar cheese, ½ cup of pecans, chopped green bell pepper, green onion, and red pepper if desired. Sprinkle in the garlic powder, onion powder, and salt.
- Use a spatula or your hands to mix everything until evenly combined.
- Transfer the mixture to plastic wrap and shape into a tight ball.
- Refrigerate the cheese ball for at least an hour to firm up.
- Unwrap the chilled cheese ball and roll it in the remaining chopped pecans to coat.
- Serve with crackers, pretzel thins, or fresh vegetable sticks.
