A refreshing and vibrant watermelon peach salad, perfect for summer gatherings.
Ingredients

- 6–8 cups of watermelon, 1-inch cubed
- 3–4 ripe peaches, pitted and cubed
- 4–6 ounces of feta cheese, crumbled
- 1/4 of a small red onion, very thinly sliced or finely minced
- 1/4 cup of fresh mint leaves, roughly chopped
- Juice of 1–2 limes
- 1 teaspoon of honey (optional)
- A pinch of sea salt
Instructions
- Prepare the watermelon by cutting it into bite-sized cubes, aiming for 1-inch pieces, and do the same with the peaches after removing their pits.
- Add the cubed watermelon and peaches to a large mixing bowl.
- Slice or mince the red onion and add it to the fruit mixture.
- Roughly chop the fresh mint leaves and incorporate them into the bowl.
- In a small bowl, whisk together the lime juice, honey (if using), and sea salt.
- Pour the dressing over the fruit and onion mixture and gently toss everything together without bruising the fruit.
- Crumble the feta cheese over the top of the salad.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
- Give the salad a gentle toss before serving and garnish with extra mint or flaky sea salt if desired.
Notes
- For added sweetness, adjust the honey or agave to your liking.
- This salad is best served chilled for maximum refreshment.
