Description
Ritz Cracker Caramel Peanut Clusters are a deliciously indulgent treat combining layers of peanut butter, caramel, and chocolate, all on a crunchy Ritz cracker base.
Ingredients
Scale
- 48 Ritz crackers
- 1 cup creamy peanut butter
- 20 soft caramels (or 1½ cups caramel bits)
- 2 tablespoons heavy cream
- 1½ cups chocolate chips (milk or semi-sweet)
- 1 cup chopped roasted peanuts
Instructions
- Make the Peanut Butter Sandwiches: Lay out half of the Ritz crackers on a flat surface. Spread a thick, even layer of peanut butter on each one, then gently press another cracker on top to create sandwich-style bases.
- Melt the Caramel: In a microwave-safe bowl, combine the soft caramels and heavy cream. Heat in 30-second intervals, stirring until smooth.
- Add the Caramel Layer: Spoon a generous amount of melted caramel over each cracker sandwich, letting it drip over the edges.
- Chill Briefly: Place the caramel-topped sandwiches on a parchment-lined tray and refrigerate for 10–15 minutes.
- Melt the Chocolate: In another bowl, melt the chocolate chips in 30-second intervals, stirring until smooth.
- Dip the Clusters: Using a fork, dip each chilled cluster into the melted chocolate, letting excess chocolate drip off.
- Add the Peanut Topping: While the chocolate is still wet, sprinkle chopped roasted peanuts generously over the top.
- Set the Clusters: Refrigerate for 20–30 minutes, or until the chocolate is fully set.
Notes
- Allow the caramel to spread naturally for a more rustic presentation.
- Overheating chocolate can cause it to seize; melt slowly for best results.
- Feel free to use different types of nuts as a topping for variety.
