Instructions

  1. Make the Peanut Butter Sandwiches: Lay out half of the Ritz crackers on a flat surface. Spread a thick, even layer of peanut butter on each one, then gently press another cracker on top to create sandwich-style bases.
  2. Melt the Caramel: In a microwave-safe bowl, combine the soft caramels and heavy cream. Heat in 30-second intervals, stirring until smooth.
  3. Add the Caramel Layer: Spoon a generous amount of melted caramel over each cracker sandwich, letting it drip over the edges.
  4. Chill Briefly: Place the caramel-topped sandwiches on a parchment-lined tray and refrigerate for 10–15 minutes.
  5. Melt the Chocolate: In another bowl, melt the chocolate chips in 30-second intervals, stirring until smooth.
  6. Dip the Clusters: Using a fork, dip each chilled cluster into the melted chocolate, letting excess chocolate drip off.
  7. Add the Peanut Topping: While the chocolate is still wet, sprinkle chopped roasted peanuts generously over the top.
