A delicious and creamy breakfast casserole featuring layers of hash browns, sausage, and cheese, perfect for a hearty morning meal.

- 2 lb hot breakfast sausage
- 2 (8-oz) packages cream cheese, room temperature
- 2 (10-oz) cans Rotel diced tomatoes and green chilies, drained
- 1 (30-32oz) bag frozen shredded hash browns, thawed
- 1 tsp salt
- ½ tsp pepper
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 2 cups shredded cheddar cheese
- 8 large eggs
- 2 cups milk
Instructions
- Preheat oven to 350ºF. Spray a 9×13-inch baking dish with non-stick cooking spray. Set aside.
- In a large skillet, cook sausage until no longer pink. Remove sausage from the skillet and place in a bowl. Add cream cheese and Rotel. Stir until combined and set aside.
- Add hash browns to skillet and cook until lightly brown. Place hash browns in bottom of lightly greased 9×13-inch pan. Top with sausage mixture and shredded cheddar cheese.
- Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over hash brown mixture.
- Bake, uncovered, for 45 to 55 minutes.
Notes
- Make sure to thaw the hash browns before using them to ensure even cooking.
- This casserole can be prepared a day in advance and stored in the refrigerator before baking.
- For a spicier dish, you can use hot Rotel tomatoes.
