A delicious and hearty breakfast casserole featuring sausage, spinach, and cheese, perfect for starting your day.


Ingredients

  • 1 pound breakfast sausage
  • 1 cup fresh spinach, chopped
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups cubed bread (preferably day-old)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart with a spatula as it cooks. Drain excess fat if necessary.
  3. Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, or until the spinach is wilted. Remove from heat and set aside.
  4. In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
  5. Add the cubed bread to the egg mixture, followed by the cooked sausage and spinach. Gently fold everything together until the bread is evenly coated.
  6. Pour the mixture into the prepared baking dish and sprinkle the shredded cheddar cheese on top. If desired, add red pepper flakes for a bit of heat.
  7. Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the center and the top is golden brown.
  8. Let cool for a few minutes before slicing and serving.
