- 1 pound breakfast sausage
- 1 cup fresh spinach, chopped
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 cups cubed bread (preferably day-old)
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart with a spatula as it cooks. Drain excess fat if necessary.
- Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, or until the spinach is wilted. Remove from heat and set aside.
- In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
- Add the cubed bread to the egg mixture, followed by the cooked sausage and spinach. Gently fold everything together until the bread is evenly coated.
- Pour the mixture into the prepared baking dish and sprinkle the shredded cheddar cheese on top. If desired, add red pepper flakes for a bit of heat.
- Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the center and the top is golden brown.
- Let cool for a few minutes before slicing and serving.

- Use day-old bread for the best texture in the casserole.
