Description

A hearty and delicious twist on classic shepherd’s pie, featuring ground beef, corn, creamy mashed potatoes, and a crispy layer of tater tots.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup diced yellow onions
  • 12 oz canned corn, not drained
  • ½ cup water
  • 0.87 oz beef gravy mix
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ tablespoon onion powder
  • ½ tablespoon garlic powder
  • 1 cup water (for mashed potatoes)
  • 2 tablespoon margarine or butter
  • 4 oz instant mashed potato mix
  • ½ cup milk
  • 28 oz frozen tater tots
  • 2 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat oven to 425F.
  2. Dump ground beef into a large skillet over medium-high heat.
  3. Crumble the ground beef well as it cooks.
  4. Add the diced onions to the pan with the ground beef while it’s cooking.
  5. Stir well and continue cooking until the onions are translucent and the ground beef is fully cooked. Drain any excess grease from the skillet.
  6. Add the canned corn to the pan and stir well.
  7. Add the water, gravy mix, salt, pepper, onion powder and garlic powder to the pan and stir until all of the ground beef is coated in a thickened gravy.
  8. Dump the ground beef mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
  9. Set the dish aside while you prepare the mashed potatoes.
  10. Pour the water and margarine into a medium saucepan and bring to a boil.
  11. Once the water is boiling remove the pan from the heat and pour in the mashed potato mix and the milk.
  12. Stir just until combined and then let the potatoes sit for 1 minute.
  13. After one minute stir until smooth.
  14. Spread the mashed potatoes over the ground beef mixture in the baking dish.
  15. Place the tater tots in a single layer on top of the mashed potatoes.
  16. Place the dish in the oven and bake the casserole for 40 minutes.
  17. After 40 minutes remove the dish from the oven and sprinkle the shredded cheese on top of the tater tots.
  18. Return the dish to the oven and continue baking until the cheese on top is completely melted and just starting to brown, 4-6 minutes.
  19. Remove the casserole from the oven and allow it to sit for a few minutes before serving.
  20. Enjoy!

Notes

  • Feel free to add additional vegetables to the ground beef mixture if desired.
