Ingredients

  • 1 lb shrimp (peeled and deveined, tails removed)
  • 1 tablespoon olive oil
  • 1 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1 1/4 cups guacamole
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp lime zest
  • 2 tbsp fresh cilantro, chopped
  • 1 bag sturdy round tortilla chips
  • 1.5 oz feta or cotija cheese, crumbled

Instructions

  1. Preheat your oven to 400°F.
  2. Combine the chili powder, cumin, smoked paprika, kosher salt, and garlic powder in a small bowl.
  3. Pat the shrimp dry with paper towels and toss with the olive oil.
  4. Add the spice mixture to the shrimp and toss until well coated.
  5. Arrange the seasoned shrimp in a single layer on a sheet pan and roast for 4-6 minutes until pink and cooked through.
  6. Set the shrimp aside to cool slightly before assembling.
  7. In a medium bowl, fold together the guacamole, lime juice, lime zest, and chopped cilantro.
  8. Arrange the tortilla chips on a serving platter and top each chip with a spoonful of the guacamole mixture.
  9. Place one roasted shrimp on each chip and sprinkle with crumbled feta or cotija cheese.
  10. Serve immediately while still warm and crispy.
