- 1 1/4 cups guacamole
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp lime zest
- 2 tbsp fresh cilantro, chopped
- 1 bag sturdy round tortilla chips
- 1.5 oz feta or cotija cheese, crumbled
Instructions
- Preheat your oven to 400°F.
- Combine the chili powder, cumin, smoked paprika, kosher salt, and garlic powder in a small bowl.
- Pat the shrimp dry with paper towels and toss with the olive oil.
- Add the spice mixture to the shrimp and toss until well coated.
- Arrange the seasoned shrimp in a single layer on a sheet pan and roast for 4-6 minutes until pink and cooked through.
- Set the shrimp aside to cool slightly before assembling.
- In a medium bowl, fold together the guacamole, lime juice, lime zest, and chopped cilantro.
- Arrange the tortilla chips on a serving platter and top each chip with a spoonful of the guacamole mixture.
- Place one roasted shrimp on each chip and sprinkle with crumbled feta or cotija cheese.
- Serve immediately while still warm and crispy.
