A delicious and easy recipe for Slow-Cooked Sweet and Sour Chicken that combines tender chicken with a tangy and flavorful sauce.

- 2 pounds boneless, skinless chicken thighs
- 1 cup pineapple chunks (fresh or canned)
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 cup sugar
- 1 cup vinegar (white or apple cider)
- 1 cup ketchup
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- In a slow cooker, combine the chicken thighs, pineapple chunks, bell pepper, and onion.
- In a separate bowl, whisk together the sugar, vinegar, ketchup, soy sauce, salt, and pepper until well combined. Pour this mixture over the chicken and vegetables in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
- Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
- In a small bowl, mix the cornstarch and water to create a slurry. Stir this into the slow cooker to thicken the sauce. Cook for an additional 15-30 minutes on high until the sauce has thickened.
- Serve the sweet and sour chicken over cooked rice, garnished with additional pineapple or bell pepper if desired.
Notes
- For a spicier version, add crushed red pepper flakes.
- This dish pairs well with steamed vegetables.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
