Description

A delicious and easy recipe for Slow-Cooked Sweet and Sour Chicken that combines tender chicken with a tangy and flavorful sauce.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 cup sugar
  • 1 cup vinegar (white or apple cider)
  • 1 cup ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a slow cooker, combine the chicken thighs, pineapple chunks, bell pepper, and onion.
  2. In a separate bowl, whisk together the sugar, vinegar, ketchup, soy sauce, salt, and pepper until well combined. Pour this mixture over the chicken and vegetables in the slow cooker.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  4. Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  5. In a small bowl, mix the cornstarch and water to create a slurry. Stir this into the slow cooker to thicken the sauce. Cook for an additional 15-30 minutes on high until the sauce has thickened.
  6. Serve the sweet and sour chicken over cooked rice, garnished with additional pineapple or bell pepper if desired.

Notes

  • For a spicier version, add crushed red pepper flakes.
  • This dish pairs well with steamed vegetables.
