- 1.5 pounds beef chuck roast, cut into chunks
- Salt and freshly ground black pepper, to taste
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups beef broth (low-sodium recommended)
- 3 cups water
- 1/4 cup soy sauce (low-sodium if preferred)
- 2 tablespoons sesame oil
- 2 tablespoons brown sugar
- 2 packs fresh ramen noodles (or about 7–8 oz egg noodles)
- 1 cup baby spinach
- 2 green onions, sliced
- Soft-boiled eggs (optional, 1 per serving)
- Sriracha or chili oil (optional, to taste)
Instructions
- Season beef chunks generously with salt and black pepper on all sides.
- Place seasoned beef in the slow cooker and arrange sliced onion, minced garlic, and grated ginger evenly over the beef.
- Pour in beef broth and water, and add soy sauce, sesame oil, and brown sugar. Stir gently to combine.
- Cover and cook on low for 8 hours or high for 4 hours, until beef is fork-tender and shreds easily.
- About 10 minutes before serving, cook ramen noodles according to package directions in a large pot. Drain well and set aside.
- Remove the lid and use two forks to shred the beef directly in the slow cooker, mixing it with the cooking liquid.
- Stir in baby spinach and let it wilt for 2-3 minutes until just tender.
- Divide cooked noodles among serving bowls, ladle shredded beef, broth, and spinach over the noodles.
- Top with sliced green onions and halved soft-boiled eggs if desired. Drizzle with Sriracha or chili oil to taste.

- Feel free to adjust the seasoning based on your taste preference.
- For a spicier broth, increase the amount of Sriracha or chili oil.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
