Deliciously easy recipe for homemade sourdough hot dog buns that are soft, fluffy, and perfect for grilling.

- 1 cup active sourdough starter (240g), fed and bubbly
- ¾ cup whole milk (180ml), warmed to room temperature
- ¼ cup granulated sugar (50g)
- 1 large egg, room temperature
- 4 tablespoons unsalted butter (56g), melted and slightly cooled
- 3½ cups bread flour (420g), plus more for dusting
- 1½ teaspoons fine sea salt
- For the Egg Wash: 1 large egg beaten with 1 tablespoon water
- Optional Topping: sesame seeds, for topping before baking
Instructions
- In a stand mixer bowl, combine sourdough starter, warm milk, sugar, egg, and melted butter on low speed until well blended.
- Add bread flour and salt, then increase to medium speed and knead for 8–10 minutes until dough is smooth, elastic, and slightly tacky.
- Transfer dough to lightly oiled bowl, cover tightly with plastic wrap, and let rise at room temperature for 8–12 hours until doubled in size.
- Turn risen dough onto a lightly floured surface, gently deflate, and divide into 12 equal pieces.
- Shape each piece into a 5–6 inch log and place them on a parchment-lined baking sheet, spaced 2 inches apart.
- Cover buns loosely with plastic wrap and let proof at room temperature for 2–4 hours until noticeably puffy.
- Preheat oven to 375°F (190°C) during the last 30 minutes of proofing.
- Brush the tops and sides of each bun with egg wash, sprinkle with sesame seeds if desired, and bake for 14–16 minutes until golden brown.
- Transfer buns to a wire cooling rack and let cool for at least 15 minutes before slicing.
Notes
- For deeper flavor, consider cold-fermenting the dough in the refrigerator for up to 24 hours.
- Make sure to wait until buns are fully cooled before storing to prevent condensation.
