Description

Deliciously easy recipe for homemade sourdough hot dog buns that are soft, fluffy, and perfect for grilling.


Ingredients

  • 1 cup active sourdough starter (240g), fed and bubbly
  • ¾ cup whole milk (180ml), warmed to room temperature
  • ¼ cup granulated sugar (50g)
  • 1 large egg, room temperature
  • 4 tablespoons unsalted butter (56g), melted and slightly cooled
  • 3½ cups bread flour (420g), plus more for dusting
  • 1½ teaspoons fine sea salt
  • For the Egg Wash: 1 large egg beaten with 1 tablespoon water
  • Optional Topping: sesame seeds, for topping before baking

Instructions

  1. In a stand mixer bowl, combine sourdough starter, warm milk, sugar, egg, and melted butter on low speed until well blended.
  2. Add bread flour and salt, then increase to medium speed and knead for 8–10 minutes until dough is smooth, elastic, and slightly tacky.
  3. Transfer dough to lightly oiled bowl, cover tightly with plastic wrap, and let rise at room temperature for 8–12 hours until doubled in size.
  4. Turn risen dough onto a lightly floured surface, gently deflate, and divide into 12 equal pieces.
  5. Shape each piece into a 5–6 inch log and place them on a parchment-lined baking sheet, spaced 2 inches apart.
  6. Cover buns loosely with plastic wrap and let proof at room temperature for 2–4 hours until noticeably puffy.
  7. Preheat oven to 375°F (190°C) during the last 30 minutes of proofing.
  8. Brush the tops and sides of each bun with egg wash, sprinkle with sesame seeds if desired, and bake for 14–16 minutes until golden brown.
  9. Transfer buns to a wire cooling rack and let cool for at least 15 minutes before slicing.

Notes

  • For deeper flavor, consider cold-fermenting the dough in the refrigerator for up to 24 hours.
  • Make sure to wait until buns are fully cooled before storing to prevent condensation.
