Description
A delicious and refreshing Strawberry Banana Cheesecake Salad that combines fresh fruit with a creamy cheesecake filling.
Ingredients
Scale
- 1 lb fresh strawberries, hulled and sliced
- 3 medium bananas, sliced
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup cold heavy whipping cream
- 1/4 cup graham cracker crumbs
Instructions
- Rinse the strawberries, pat them completely dry, then hull and slice them into 1/4-inch pieces. Set them in a large mixing bowl.
- Beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer on medium speed for 2 to 3 minutes until silky and lump-free.
- Whip the cold heavy cream in a separate chilled bowl on medium-high speed for 2 to 4 minutes, until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture in three additions using a spatula, stopping when no white streaks remain.
- Slice the bananas into 1/4-inch rounds and gently toss them with the strawberries.
- Layer half the fruit in a large serving bowl, spoon over half the cheesecake cream and spread gently. Repeat with remaining fruit and cream.
- Chill the salad for 15 to 30 minutes so flavors meld and the cream firms slightly.
- Sprinkle the graham cracker crumbs over the top just before serving.
Notes
- Dry your strawberries well before slicing to prevent watery layers.
- Let cream cheese sit 30 to 45 minutes to soften fully and avoid lumps.
- Chill the bowl and beaters for 10 minutes to help the heavy cream whip faster.
- Stir one spoonful of whipped cream into the cream cheese to loosen it, then fold in the rest to keep the filling airy.
- Slice bananas last; a teaspoon of lemon juice will keep slices bright if prepping ahead.
- Keep graham cracker crumbs separate and sprinkle on each serving to preserve crunch.
- Refrigerate leftovers in an airtight container for up to 2 days; keep crumbs separate.
- The cheesecake cream can be frozen for up to 1 month; thaw overnight in the fridge and rewhip gently if needed.
