Description
Delicious strawberry cake mix cookies topped with a creamy vanilla cream cheese frosting, perfect for any occasion!
Ingredients
Scale
- ¼ cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup + 1/8 cup strawberry cake mix (approximately 9 ounces)
- ¼ cup unsalted butter, softened
- ¼ cup cream cheese, softened
- 1 teaspoon vanilla extract
- 2 to 4 cups confectioners’ sugar
Instructions
- Preheat oven to 350°F.
- In a mixing bowl, combine softened butter, egg, and vanilla; mix until combined.
- Add cake mix and stir until smooth. Adjust dough consistency with more cake mix or water as needed.
- If time allows, chill the dough in the freezer for 15 to 20 minutes.
- Form 1-inch balls and place on a lined cookie sheet, allowing adequate spacing.
- Bake for 8 to 10 minutes or until barely browned.
- Allow cookies to cool before moving them from the cookie sheet.
- While cookies are baking, prepare the frosting by beating together butter and cream cheese until smooth.
- Add vanilla extract and 2 cups of powdered sugar; mix until smooth. Adjust sweetness and thickness with more powdered sugar as desired.
- Once cookies have cooled, frost them generously and add any desired toppings like sprinkles or coconut flakes.
Notes
- Chilling the dough prevents cookies from spreading too much during baking.
- Store frosted cookies in the refrigerator if not consumed within a day.
- For thicker frosting, add more powdered sugar to your liking.
