Description

A delightful one-skillet meal featuring sweet potatoes, BBQ chicken, and melted cheese.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 2 cups cooked chicken, shredded or cubed
  • 1 cup BBQ sauce (your choice of flavor)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup green onions, sliced (optional, for garnish)

Instructions

  1. Preheat Skillet: Heat a large skillet over medium heat and add olive oil.
  2. Cook Sweet Potatoes: Add the diced sweet potatoes to the skillet. Season with garlic powder, onion powder, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until they begin to soften.
  3. Add Chicken: Once the sweet potatoes are partially cooked, add the cooked chicken to the skillet. Pour in the BBQ sauce and mix well.
  4. Simmer: Reduce heat to low and cover the skillet. Allow the mixture to simmer for an additional 10 minutes, letting the flavors meld together.
  5. Add Cheese: Remove the lid and sprinkle the shredded cheese evenly over the chicken and sweet potatoes. Cover again and let it cook for another 5 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve: Remove from heat and garnish with green onions if desired. Serve hot straight from the skillet.
