- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder

- 1 cup milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup maple syrup
Instructions
- Preheat your oven to 400°F (200°C) and line your muffin tin with paper liners.
- Combine the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
- Whisk together the milk, melted butter, eggs, and maple syrup in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
- Let them cool for a few minutes, then serve warm.
Notes
Use real maple syrup for best flavor. Muffins can be frozen for up to 3 months.
