- 2 to 3 pounds beef brisket
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion chopped
- 3 cloves garlic minced
- 2 carrots chopped
- 2 celery stalks chopped
- 2 tablespoons tomato paste
- 2 cups beef broth
- 1 cup red wine
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 2 bay leaves
- 3 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 tablespoons fresh parsley chopped
Instructions
- Pat the brisket dry and season with salt and pepper.
- Sear the brisket in olive oil until browned on all sides.
- Remove and sauté onion, carrots, celery, then add garlic.
- Stir in tomato paste and deglaze with red wine.
- Add beef broth, Worcestershire sauce, and brown sugar.
- Return brisket and add herbs.
- Cover and braise at 300°F for 3 to 4 hours.
- Rest the brisket for 15 minutes before slicing.
- Simmer sauce until slightly thickened.
- Serve sliced brisket with sauce and garnish with parsley.

- For a richer flavor, let the brisket marinate overnight.
