Description

A classic dessert featuring sweet pineapple slices and cherries on a moist cake, perfect for any occasion.


Ingredients

  • ½ cup unsalted butter
  • ¾ cup light brown sugar, packed
  • one 20-ounce can pineapple slices
  • about 12 maraschino cherries
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • pinch salt, optional and to taste
  • 1 large egg
  • ½ cup buttermilk (or use 2 tablespoons powdered buttermilk with ½ cup water)
  • ⅓ cup sour cream (lite is okay, or plain Greek yogurt)
  • 3 tablespoons canola or vegetable oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350F.
  2. In a small, microwave-safe bowl, melt the butter, about 1 minute on high power.
  3. Pour the butter into a 9-inch springform cake pan and grease the sides with your finger.
  4. Evenly sprinkle the brown sugar over the melted butter.
  5. Add 1 whole pineapple slice to the center of the pan.
  6. Halve the remaining pineapple slices vertically and arrange them around the pan in a fanned-out manner.
  7. Place 1 cherry in the center of the whole pineapple slice and in the center cutout of all fanned pineapple slices.
  8. In a large bowl, whisk together the flour, granulated sugar, baking powder, and optional salt.
  9. In a separate bowl, whisk together the wet ingredients (buttermilk, sour cream, oil, egg, and vanilla).
  10. Add the wet mixture to the dry and mix lightly until just combined, avoiding overmixing.
  11. Gently pour the batter into the prepared pan, filling it to about ¾ full.
  12. Place the pan on a cookie sheet and bake for about 40 minutes, or until a toothpick comes out clean from the center.
  13. Let the cake cool for at least 30 minutes on a wire rack before inverting and serving.

Notes

  • For best results, allow the cake to cool overnight before inverting.
  • Do not overfill the pan to avoid overflow during baking.
  • Maraschino cherries can be substituted with fresh cherries for a different flavor.
