Description

Deliciously soft and fluffy pumpkin cinnamon rolls topped with cream cheese glaze, perfect for enjoying in the fall!


Ingredients

  • 3 ¼ cups all-purpose flour, or as needed
  • ¼ cup granulated sugar
  • 2 tablespoons pumpkin pie spice
  • 2 ¼ teaspoons instant dry yeast, one 1/4-ounce packet
  • Pinch salt, to taste
  • ½ cup unsalted butter, melted (1 stick)
  • ½ cup buttermilk
  • ½ cup pumpkin puree
  • 1 large egg, lightly whisked
  • 6 tablespoons unsalted butter, very soft
  • 1 to 1 ¼ cups light brown sugar, packed
  • 2 + tablespoons cinnamon
  • 4 ounces brick-style cream cheese, softened
  • 2 cups confectioners’ sugar
  • Pinch salt, optional and to taste
  • 3 to 4 tablespoons half-and-half or cream, or as needed for consistency

Instructions

  1. Make the Dough: In a stand mixer, combine flour, sugar, pumpkin pie spice, yeast, and salt.
  2. Melt the butter and mix with buttermilk and pumpkin. Add to dry ingredients.
  3. Whisk and add the egg to the mixing bowl.
  4. Knead the dough for about 7 minutes.
  5. Oil a bowl and let the dough rise for 2 to 2.5 hours until doubled in size.
  6. Prepare a 9×13-inch aluminum pan with cooking spray.
  7. Roll out the dough to about 26-by-13-inches.
  8. Spread butter, brown sugar, and cinnamon on the rolled dough.
  9. Roll the dough into a log and slice into rolls using dental floss.
  10. Arrange sliced rolls in the prepared pan and let rise for about an hour.
  11. For overnight rolls, refrigerate after slicing, and let rise to room temperature before baking.
  12. Bake at 375F for 15 to 17 minutes until golden.
  13. Make the cream cheese glaze and pour over warm rolls.
  14. Serve immediately.

  • The dough is best when slightly wetter for fluffier rolls.
  • Let cream cheese sit out to soften for easier mixing.
  • Floss is recommended for slicing dough for even rolls.
