Vegan Chicken And Dumplings is a comforting dish made with soy curls and dumplings in a hearty broth.


Ingredients

  • 8 ounces soy curls
  • 3 cups vegan chicken broth
  • 6 tablespoons vegan butter
  • 1 medium yellow onion, finely diced
  • 3 medium carrots, peeled and thinly sliced
  • 23 celery ribs, thinly sliced
  • 24 cloves garlic, minced
  • 4 tablespoons all-purpose flour
  • ¾ teaspoon dried thyme
  • ¼ teaspoon freshly cracked black pepper
  • 34 cups vegan chicken broth, add as desired
  • ½¾ cup canned full-fat coconut milk
  • 2 cups unbleached all-purpose flour
  • 1 tablespoon + 1 teaspoon baking powder
  • ¼½ teaspoon iodized salt
  • ¾ teaspoon dried thyme
  • ¼ teaspoon freshly cracked black pepper

Instructions

  1. In a large pot, melt vegan butter. Add onion and garlic; sauté until translucent.
  2. Add carrots and celery; cook until slightly softened.
  3. Stir in soy curls, broth, coconut milk, thyme, and pepper. Simmer for 10 minutes.
  4. In a bowl, mix flour, baking powder, salt, thyme, and pepper for dumplings.
  5. Add water to form a soft dough. Drop spoonfuls into simmering broth.
  6. Cover and cook dumplings for 15-20 minutes until fluffy.

Notes

  • Adjust the amount of broth for desired soup consistency.
  • You can use any vegan chicken substitute if soy curls are unavailable.
