- 8 ounces soy curls
- 3 cups vegan chicken broth
- 6 tablespoons vegan butter
- 1 medium yellow onion, finely diced
- 3 medium carrots, peeled and thinly sliced
- 2–3 celery ribs, thinly sliced
- 2–4 cloves garlic, minced
- 4 tablespoons all-purpose flour
- ¾ teaspoon dried thyme
- ¼ teaspoon freshly cracked black pepper
- 3–4 cups vegan chicken broth, add as desired
- ½–¾ cup canned full-fat coconut milk
- 2 cups unbleached all-purpose flour
- 1 tablespoon + 1 teaspoon baking powder
- ¼–½ teaspoon iodized salt
- ¾ teaspoon dried thyme
- ¼ teaspoon freshly cracked black pepper
Instructions
- In a large pot, melt vegan butter. Add onion and garlic; sauté until translucent.
- Add carrots and celery; cook until slightly softened.
- Stir in soy curls, broth, coconut milk, thyme, and pepper. Simmer for 10 minutes.
- In a bowl, mix flour, baking powder, salt, thyme, and pepper for dumplings.
- Add water to form a soft dough. Drop spoonfuls into simmering broth.
- Cover and cook dumplings for 15-20 minutes until fluffy.
Notes
- Adjust the amount of broth for desired soup consistency.
- You can use any vegan chicken substitute if soy curls are unavailable.
