Ingredients

  • ½ cup + 2 tablespoons dried strawberries (save 1 tablespoon for topping)
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1 teaspoon vanilla bean paste or extract
  • 1 cup + 2 tablespoons all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup powdered sugar, sifted
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 1 tablespoon plant-based milk or water

Instructions

  1. Cream vegan butter, sugar, and dried strawberries until fluffy.
  2. Add flax egg and vanilla, and mix well.
  3. Sift together dry ingredients and mix into the wet mixture.
  4. Chill the dough for 30 minutes to 1 hour.
  5. Preheat oven to 350°F and prepare a baking sheet.
  6. Form dough balls, roll in sugar, and bake for 12-14 minutes.
  7. Cool down and drizzle with icing made from powdered sugar, vanilla, and plant-based milk.
